What are the standout games for those genres on the system? any beat em ups?
Well Capcom developed for it so Final Fight, Dai Makaimura, Strider, and Street Fighter 2 are on there. Pretty much is the arcade with better sound. But really all you need for X68k is Words Worth (H-RPG Dungeon Crawler) Carat, and Metal Orange. However there are also so many awesome doujin shooters are on the X68k. Dive On is a great one. I know SuperDeadite can chime in and tell you all you need to know. Raizing did Mahou Daisakusen 魔法大作戦.

If you're looking for exclusives, you're not going to find much.
However, one that does get a lot of love is Aquales. http://www.hardcoregaming101.net/aquales/aquales.htm
I haven't quite beaten it, but I've cleared four or five stages and had a really good time doing it.

Wofteam's games are also way better than the Genesis/MD/MCD ports that were done. Don't forget the tiny company Zoom. They made awesome games. Phalanx, Overtake, and Lagoon are awesome games.

Lot's of amazing arcade ports, that often offer some neat exclusive features. For games that came out on multiple systems, the X68's versions were the best 95% of the time. Also being an extremely popular machine for doujin makers, there are a lot more exclusive games then most people realize. The X68 was a machine with no rules really, people did some crazy stuff. As geise mentioned, if you check out my channel there is a lot to see.

Don't forget the MIDI tunes - Ghouls and Ghosts (among numerous others) sound completely amazing with a MIDI module.
