Sega Ages Gunstar Treasure Box and Monster World Collection are pretty high up there.
Working Design's US Sega Ages release also has two beautiful, arcade perfect Sega classics and After Burner II.
The Mega Man and Mega Man X collections are flipping excellent. Tons of games and they still include the arcade games and Battle and Chase.
The PSP Konami shooter collections are really cool, too...
It's hard to decide!

In descending order of awesomeness:
Ys I & II
Gate of Thunder 4-in-1
Xak I & II
Dracula X Chronicles (PSP)
Sega Genesis Collection (PSP)
And then the Ultrabox six pack, if they count.
-
Sonic's Ultimate Genesis Collection
Taito Legends 2 > 1
Midway Arcade Origins
SNK Arcade vol 1 is good, but not a top for me b/c Neo Turf Masters has slow down :)
I have Activision Anthology and Intellivision Lives! for PS2, but I feel the interface is not as slick as others.
-
SNES Super Mario All*Stars. Nothing else even comes close.
What about the All Stars with Super Mario World cart?
That's actually the one that I have, but since SMW was the pack-in game and everyone has it, I don't even think about it when thinking about Super Mario All*Stars. To me, the draw of that cart is the visually-upgraded versions of the NES games.

Compilation games, and a few PS1 games, such as Road Rash, were the reason I bought a PS2 when they dropped to $99 new, about the time PS3 was out.
Capcom Collection 1
Capcom Collection 2
Sega Genesis Collection
ActivisionC ollection
SNK collection
Metal Slug Collection
Taito Collection 1
Taito Collection 2
Williams Pinball
Namco Museum
Midway Treasures 1
Midway treasures 2.
etc.
*edited to add;
If you count PC, I enjoyed years ago, the retail boxed stuff for Heroes of Might and Magic compendium? I forget, it had HOMM1, HOMM2 + all it's expansion stuff. I played HOMM2 quite a bit, for a while. Also, "ONE UNIT WHOLE BLOOD". It had the Blood game, and all the expansion stuff.
Lately, with PC stuff, I go through GOG, and get their sales of bundles of games. The Bullfrog bundle is nice.

Megaman X Collection (Cube)
metal Slug Anthology (Wii)
Taito Legends 2 (PS2)
Are my go-to compilation games.
-
Sonic Gems (NGC). No need to install Sonic R, Sonic CD (which demands 256 colors) or fiddle with the nebula emulator to play Sonic Fighters.

Metroid Prime Trilogies Limited Edition mmmmmmmmmm bought that guy on launch day and have enjoyed it ever since (and the price rise ain't that bad either )).
